Mom's Madeleines

For 9 madeleines:

  1. Mix the eggs, sugar and salt until the mixture turns very pale yellow. Add the melted butter and incorporate well.
    Carefully add the flour without over-mixing, we don't want to develop gluten.
  2. Place in a silicon madeleine mold. Cook in the oven for 5 to 8 minutes at 120°C, then 180°C for 10 minutes.
  3. Let cool slightly before un-molding, but do not wait until completely cold. You do want to get them out of here warm so the bottom of the madeleines do not become soggy. Let them cool completely on a wire rack.

You can keep these for up to 5 days in an air-tight container at room temperature.

Bonus notes

This recipe, as the title suggests, comes from my mom. It doesn't have anything fancy, no vanilla extract, no fancy ingredients. And yet somehow these do taste like there's vanilla in there, and the balance between dry/crumbly and moist texture is in my (absolutely-never-unbiased) opinion perfect. I think this is one of these dessert recipe you should always be able to make, in case you have someone who's coming over or you need a little sweet treat to cheer yourself up.

If you wish you can also substitute up to 15% of the flour with cocoa powder to make chocolate madeleines. You can infused the butter with any tea you'd like too!
